Whole Banana Bread

Yes, you can eat the peels too! This whole banana bread recipe uses the entire banana — peels included — to cut down on food waste and grocery costs. It’s a delicious, low-waste, budget-friendly way to bake more sustainably.

Ingredients

  • 4 large bananas, with their peels

  • 1/4 cup olive oil

  • 2 cups plain (all-purpose) flour

  • 1/2 cup raw sugar

  • 2 tbsp chia seeds

  • 1 tsp cinnamon

  • 1/4 tsp salt

  • 1 tbsp baking powder

OPTIONAL MIX-INS

  • 1/2 cup chocolate chips

  • Spices, such as: nutmeg, cloves

 

Method

  1. Preheat the oven to 180ºC.

  2. Peel the bananas and mash them using a fork. Roughly chop the peels and discard any rougher bits.

  3. In a large bowl, add the banana mash, the peels and the olive oil. Blend with a stick blender.

  4. Add the remaining ingredients, except for the baking powder and mix until everything is combined.

  5. Add the baking powder and mix gently.

  6. Line a loaf pan with baking paper and brush it with a little bit of oil.

  7. Bake for 1 hour and 15 minutes at 180ºC.

  8. Take the bread out of the oven and wait another 20 min before slicing.
