Peanut Oat Granola Bar
These chewy peanut oat granola bars are a simple, satisfying snack made with just a few pantry staples. Packed with energy and a hint of natural sweetness, they’re perfect for lunchboxes, busy mornings, or anytime you need a quick, nourishing bite. Homemade, no-fuss, and way better than store-bought.
Ingredients
1/8 cup canola oil, plus extra for greasing pan and hands
1 cup rolled oats
1/2 cup flaked coconut
1 tsp your favourite spices such as cinnamon, nutmeg, allspice, cardamon
Pinch of salt
1/4 cup rice malt syrup
1/2 cup roasted peanuts, chopped coarsely
OPTIONAL ADDITIONS
You could do a mix of nuts you already have and add in dried fruit too, also nice with vanilla
Method
Heat oven to 190 celsius. Line a baking tray with baking paper.
Put oats in a bowl and toss with oil and then spread oats in an even layer on the lined tray for 20 mins, string halfway through. Remove the oats when they are lightly browned and fragrant.
Turn the oven down to 150 celsius.
Using the oat bowl, return oats and add coconut, spices, salt and nuts and stir together.
Place rice malt syrup in a large saucepan and bring to a boil, reduce heat to low and simmer for 5 minutes, remove from heat.
Pour syrup over oats and stir oat mix is evenly coated.
Using the same baking tray, refresh with new baking paper and reserved oil for greasing the paper. Evenly spread the mixture in the baking tray. Bake for 25 mins or until golden.
Remove from heat and cool completely and then cut into your desired size.
NOTES
These will last in your cupboard for a week and would make a perfect breakfast or easy snack.
