Matcha & Coconut Balls

Earthy, vibrant, and naturally energising, these Matcha & Coconut Balls are the perfect pick-me-up. With just a handful of ingredients, they come together in minutes for a snack that’s as wholesome as it is flavourful — ideal for an afternoon boost or a mindful treat on the go.

Ingredients

  • 100g dried apricots

  • 2 tbsp apricot jam (optional)

  • 1 tsp matcha powder

  • 1/3 cup puffed rice or almond meal

  • 2/3 cup shredded coconut

  • 1/3 cup rice malt syrup

  • Pinch of salt

Method

  1. Roughly chop pitted apricots.

  2. In a large bowl, add chopped apricots, jam, matcha, puffed rice, and syrup. Add half of the shredded coconut. Place remaining coconut in a separate bowl, and set aside.

  3. Mix the contents of the apricot/matcha bowl. From this mixture, form the balls in the palm of your hand. Roll each ball in the coconut that you had previously set aside.

  4. Refrigerate the balls to store them, so they keep their shape. These are best consumed fresh, however will last for up to a week.

NOTES

Matcha isn't always cheap, these balls would taste great without it too!
