Ingredients
MAKES 15 BALLS
5 fresh medjool dates, pitted and chopped.
¼ cup oats
¼ cup almond meal
¼ cup tahini
2 tablespoons maple syrup or honey
3 tbsp cocoa powder
pinch of sea salt
1-2 tbsp sesame seeds (for coating)
Method
In a food processor blend together all of your ingredients (except sesame seeds) until you’ve achieved a smooth rollable consistency. You can also do by hand in a mixing bowl achieving a coarser but still delicious texture.
How do you like it? Is it sweet enough? Can you taste the salt? Adjust to your liking! If your mix is too dry add a bit of water. If too wet add more oats or almond meal.
Using clean hands roll mixture into around 15 balls.
Place sesame seeds onto a small plate and roll the balls through the seeds to create a decorative coating.
Store refrigerated in an airtight container. Eat within a week. These freeze well too!
TIPS
Date paste is often much cheaper than buying fresh dates - use about 2-3 tablespoons here.
Likewise, to save money use what you’ve already got! Almond meal can be replaced with any nuts ground up or even sunflower seeds!
